Chablis Saint Martin
The Saint Martin cuvée is a blend of the finest historic terroirs of Chablis appellation. The legend of Saint Martin is closely linked to the village of Chablis. "One day he met a beggar to whom he gave half of his cloak that he had cut with his sword. Saint Martin's gesture is a sign of extreme generosity since he gave everything he had." Saint Martin, patron saint of travelers, the symbol of generosity and sharing, his relics were hidden at the end of the 9th century in the historical cellars of the Obédiencerie, headquarters of Domaine Laroche, where the monks of Saint Martin de Tours used to live.
Whole bunches are collected in a pneumatic press, then 12 hours settling at 10 to 12°C to accelerate the natural settling process. 21 days of fermentation at 17°C in stainless steel tanks and wooden casks.
100% Chardonnay / Left and right bank
Ageing on fine lees in stainless steel tanks and wooden casks "foudres" of 55hl during 6 months on average. Alcoholic and malolactic fermentation.
