The Grand Devois is a highly expressive wine resulting from a double selection (on the vine and in the wine cellar).
Vinification
Harvested by hand. Sorting. De-stemming. Cold pre-fermentation maceration. Fermentation in temperature-controlled truncated wooden and concrete vats (25-28°C) with daily pump-overs (1 to 4 per day) and 1 to 2 delestages, followed by a long maceration for optimal extraction. Malolactic fermentation in barrels.

Soil of Jurassic limestone (marine origin)
Grape variety
80% Syrah, 20% Grenache Noir.
Aging
12 months in French oak barrels (50% new, 50% one-wine). Selection of the highest quality barrels before blending.
