Le Relais de Patache d'Aux is the second wine of Château Patache d'Aux. It comes from younger vines on selected plots, which makes it fruitier and more pleasant.
Vinification
Vinified in temperature-controlled uncoated concrete vats. Maceration for 3 to 4 weeks. Pneumatic with selection of the first and second press juices. Temperature: average 25°C. Pumpovers: 3 to 4 times daily for 4 days during 15 days. Malolactic fermentation is in heat controlled stainless steel tanks.
