Les Chevaux de Patache d'Aux comes from young vines on selected plots which makes it fruitier and more pleasant.
Vinification
Wooden, cement and heat-controlled stainless-steel tanks. Maceration for 3 to 4 weeks. Pneumatic with selection of the first and second press juices. Average temperature: 25°C. Pumpovers: 2 times per day during 15 days. Malolactic fermentation in heat controlled stainless steel tanks.
