In 1927, Maison Cazes acquired Mas Joffre in Rivesaltes, the property formerly owned by Maréchal Joffre. "Le Canon du Maréchal" is a range of wines from these vineyards, in homage to this Catalan hero. Certified organic and biodynamic, these are fruity, supple and crisp wines, which accompany with elegance and ease a whole meal.
Vinification
Pre-fermentation maceration for part of the cuvée and traditional maceration for one to two weeks at 23/25°C, accompanied by light pumping over. After pressing, the end of fermentation takes place at 20°C.
