The flagship of "Les Clos de Paulilles" dry wines, Notre Dame des Anges comes from the oldest parcel of Mourvèdre in the Collioure appellation, rooted on a slope of brown and blue schist facing the sea. The vineyard is run biodynamically, ploughed with a horse and harvested in small crates. Only the finest grapes are selected.

Harvested and selected by hand, our finest and most powerful Mourvèdre grapes are destemmed before being placed in stainless steel vats for temperature-controlled alcoholic fermentation (23-30°C). Softened by a few fine coastal Syrahs made in the same way. Alcohol content: 14.5% Alc/Vol.

Aged in French oak demi muids for 12 months. Micro-oxygenation and the choice of wood for ageing magnify and tame the powerful tannic structure of this wine.
